Pumpkin Chia Pudding

Pumpkin Chia Pudding

INGREDIENTS:

- 1 cup coconut milk

- 1 cup pumpkin puree (pure pumpkin, unsweetened)

- 1/2 cup chia seeds

- 1 tsp pumpkin pie spice

- 1 tsp vanilla extract

- stevia, to desired sweetness

Toppings:

- toasted coconut shreds

- cinnamon

MAKE:

  1. Mix all ingredients together well. Place in covered container in the refrigerator for at least 30 mins. 

  2. At this point the chia will have gelled. You can serve as is or blend in blender for a smoother texture. 

  3. Top with coconut chips and a sprinkle of cinnamon to serve.
